Berry Mix Shrub Tonic

A deep ruby shrub tonic made with OCC Berry Mix Fruit Vinegar — jammy berry flavour, a clean tonic finish and plenty of ice.

Method

  1. Stir the berry mix vinegar and honey together until the honey dissolves.
  2. Fill 4 tumblers with ice and pour about 20ml of the berry mixture into each.
  3. Top with tonic water and stir gently.
  4. Garnish with a thyme sprig and an edible flower.

Chef’s tip

For a cocktail version, add 30ml gin per glass before the tonic.
